I enjoyed a great dinner with my family, and I was very happy with how much everyone loved their gifts!
I hope you had fun on this 25 day adventure; and I don't know about you but it's time to break out that workout gear! Why is it Thanksgiving and Christmas has to be so close together?
Merry Christmas and enjoy this yummy dessert!
Filling:
2 cups pumpkin
1 can sweetened condensed milk
1 TBS maple syrup (you can use the cheap maple flavored syrup)
1 tsp pumpkin pie spice
2 large eggs
Streusel Topping:
1/4 cup brown sugar
2 TBS flour
2 TBS cold butter
1/4 cup finely chopped walnuts (optional)
Heat oven to 425.
In bowl beat all the filling ingredients and pour into crust, bake 10 minutes. Meanwhile make the streusel topping by mixing the sugar and flour together and then cutting in the butter, then add the walnuts.
Remove the pie from the oven. Reduce the heat to 350. Sprinkle the topping over the pie. Cover the crust with foil and bake 30-25 minutes more or until knife inserted in the center comes out clean.
Yields:1 pie-8 servings
